Lancer Media Kitchen: Cake pops are a treat, a gift, and welcome Spring!

I have made the cake pops both by cake pop machine and by mix. I prefer the mix because the machine gets too messy, and clean up is difficult. I like putting the love and time into making them by hand. My friends love my homemade pops,  and now you can make them for your friends in time for Easter and spring.

Ingredients:

1 Cake Box Mix and Ingredients For Mix

1 Can of  Frosting

1 Bag of Melting Chocolate

1 Bag of Mini Chocolate Chip

Sprinkles

Materials:

Pan

Cookie Scooper

Mixer

Medium Bowl

Plastic Gloves (optional)

Waxed Paper

Cookie Sheet

Lollipop Stick

Foam Block or Cardboard Box with Holes

Directions:

  1. Follow all directions on the cake mix box and put the batter into a pan. Bake.  Let the cake cool for an hour or more until completely cool.
  2. Once the cake cools, cut the cake into four sections. Put the first section in the bowl. At this point it will get messy, so if you want the gloves you can. Smash the cake so it forms into crumbs and feels a little like Playdough.
  3. Once completely mashed, put a spoonful of frosting into the bowl. With your hands, combine the frosting and cake until it is incorporated. This may take 2 to 5 minutes. Once you are satisfied with the dough, use the cookie scoop and make about a 1-inch round ball. You can also use your hands to form the balls.
  4. Put the balls on a wax paper cookie sheet and put it in the refrigerator for 30 mins or until cold. Repeat steps #2  – 4 for the rest of the sections.
  5. Take the balls out five at a time because it is best to dip the balls when they are cold.
  6. Melt the chocolate at low heat and stir every 15 seconds. Don’t over cook the chocolate or it will burn. Dip the tip of the lollipop stick in the chocolate and stick it in the cold cake pop. Then put that cake in the refrigerator until you finish dipping all the pops.
  7. Take out three pops and dip the pops in the chocolate. Put the cake pop in the foam block and at this time you can add sprinkles on the pop before it dries completely.
  8. Repeat until all cake pops are done being dipped. Wait one hour for chocolate to become hard and put the cake pops in an airtight container.

Tips:

*The more icing you put in the cake crumbs the more gooey it will become. Start with a little icing and add a little at a time.

* I normally dip my cake pops half way so it doesn’t take a lot of chocolate.
